Low carb cauliflower sides

Fried Cauliflower Rice 

INGREDIENTS:

  • 1/2 large cauliflower head
  • 1 onion
  • 2 t crushed garlic
  • 1/2 t crushed ginger (can use fresh)
  • 200g green beans, sliced
  • 2 spring onions, diced
  • 1-2 T soy sauce (or coconut aminos)
  • 4 T Fresh herbs, finely chopped (parsley is great!)
  • Salt & pepper 

METHOD 
Place cauliflower florets in a food processor and pulse until resembles rice. In a non-stick frying pan add all of the vegetables including the cauliflower rice, garlic and ginger, and dry fry for 2-3 minutes. Add soy sauce, herbs and then season with salt and pepper.
Serves 2-3

Gluten free. Dairy Free.  

Cauliflower Mash  

Grate cauliflower. Boil it in water until soft. Place in a blender with chives, salt and pepper.

Blend until smooth.

Curried Cauliflower

Mix together 2 t curry powder, 2 t stevia, 1 t lemon juice, 1⁄2 t salt, 1⁄4 t black pepper. Cut cauliflower into florets. Coat in spice mix. Bake in a moderate oven until soft.
