INGREDIENTS 

  • Basmati Rice – as per portion on your plan
  • ½ Lemon (juice & zest)
  • Large handful of chopped Italian parsley
  • Small handful of chopped mint
  • Coconut oil – as per portion on your plan

METHOD 
Cook rice as per packet instructions. Once cooked set aside in a separate container and stir in coconut oil. Then toss through the finely chopped herbs, lemon juice & zest then season with salt and pepper.
