Protein Waffles

INGREDIENTS

  • 2 whole eggs
  • ½ tsp vanilla extract
  • 125mls unsweetened nut milk
  • 60g protein powder
  • 30g oat or coconut flour
  • 1 tsp baking powder
  • 1T sweetener of choice
  • Spray olive oil
  • 50g berries or 100g tinned peaches
  • Sugar-free maple syrup

 

METHOD

Add the first three ingredients into a bowl and mix until well combined. Sift dry ingredients into the wet mixture. Mix until well combined.

Coat the waffle iron with spray oil, pour ¼ of the batter onto the iron, and close until cooked. Repeat.

For those looking to really indulge, these are great topped with banana, Nutella, and ice cream!
