
INGREDIENTS

2 whole eggs
½ tsp vanilla extract
125mls unsweetened nut milk
60g protein powder
30g oat or coconut flour
1 tsp baking powder
1T sweetener of choice
Spray olive oil
50g berries or 100g tinned peaches
Sugar-free maple syrup
METHOD
Add the first three ingredients into a bowl and mix until well combined. Sift dry ingredients into the wet mixture. Mix until well combined.
Coat the waffle iron with spray oil, pour ¼ of the batter onto the iron, and close until cooked. Repeat.
Serves 2.
