INGREDIENTS
- 2 whole eggs
- ½ tsp vanilla extract
- 125mls unsweetened nut milk
- 60g protein powder
- 30g oat or coconut flour
- 1 tsp baking powder
- 1T sweetener of choice
- Spray olive oil
- 50g berries or 100g tinned peaches
- Sugar-free maple syrup
METHOD
Add the first three ingredients into a bowl and mix until well combined. Sift dry ingredients into the wet mixture. Mix until well combined.
Coat the waffle iron with spray oil, pour ¼ of the batter onto the iron, and close until cooked. Repeat.
For those looking to really indulge, these are great topped with banana, Nutella, and ice cream!
