INGREDIENTS:
- Eggs – as per the portion on your plan
- Vegetables – Mushrooms, red onion, capsicum, cherry tomatoes, spinach are great fillings
- Seasoning; salt, pepper – you can add others such as basil, oregano, garlic salt or paprika – whatever works for you!
- Spray oil
- Toast – as per the portion on your plan
METHOD:
Start by chopping your vegetables – TIP the thinner you slice the quicker they will cook.
Heat frypan to a low heat and use a spray of oil – add vegetables. Whilst veggies are cooking add your eggs to a nutri-bullet blender and blend until nice and foamy – if you don’t have a blender use a hand whilst and whisk until you have a nice egg foam on top. Add another light spray of oil and add egg mixture to pan. Lightly fold mixture so the raw egg gets some heat on the bottom of pan. Finish off in oven for grill to coo the top of your omelette. Serve with your toast.
