INGREDIENTS
Fritter:
- 2 large courgettes, grated and drained
- 1 tsp salt
- 1 large egg
- ½ onion, chopped finely
- 1 Spring onion, chopped
- 1 ½ tsp lemon pepper
- ½ tsp baking powder
- 30g of oatmeal finely ground
- Spray Oil
- Lemon
- Coriander
DIRECTIONS
Mix all fritter ingredients together in a large bowl.
Spray a hot pan with oil and spoon your mixture into the pan.
Once the edges are browned, flip like a pancake. Serve with a squeeze of lemon and coriander.
