Beef Stroganoff

INGREDIENTS

  • Rice (as per 4 times the RAW carb portion on your plan)
  • 3T fresh thyme, chopped
  • 2 tsp olive oil
  • 250g mushrooms, finely diced
  • 1 onion, finely diced
  • 3-4 cloves of garlic, finely diced
  • Sirloin steak, sliced into 1cm slices (as per 4 times the RAW protein portion on your plan)
  • 2 tsp paprika
  • Zest of one lemon
  • 2 tsp olive oil
  • 100g natural yoghurt
  • 100mL trim milk
  • 2 large handfuls of fresh spinach
  • Handful fresh parsley, chopped

 

DIRECTIONS

Cook rice as per packet instructions with thyme added during the cooking process.

Heat a non-stick pan over medium-high heat and add oil. Cook mushrooms, onion and garlic. Remove from the pan.

Toss steak in paprika and lemon. Cook in a hot pan with the second portion of oil. Return mushrooms to the pan and add the milk and yoghurt. Bring to the boil.

Serve with rice, toss through spinach and sprinkle with parsley.
