Protein boosted Banana Bread

Seems the world is going crazy for banana bread – and so are we! Banana bread is a comforting food and can make a great snack, but if you are on a weightloss or health journey we have to eliminate those unnecessary calories – with this recipe we just feel you don’t need them! We think its sweet enough!

 INGREDIENTS

  • 2 bananas – the browner the better
  • 2T melted coconut oil
  • 2T anchor protein yoghurt (Greek yoghurt will also work well)
  • 2 eggs
  • 185g oats – blend into a flour
  • 60g protein powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 cup dark chocolate chips

 METHOD

Preheat oven to 180 degrees fan bake.

Mash bananas, add your yoghurt, oil, and eggs then mix well. Fold through dry ingredients and lastly add the chocolate chips

Pop into either a loaf tin or muffin molds and cook for 20 minutes – check after 20 minutes by probing with a skewer to see if your bread is cooked through.

6 Serves – 200 calories per serve

    Delicious!!! Although the first lot tasted a bit too baking powderey and didnt rise much so made a second lot with 1 TSP of baking soda only and it was much better. 🙂
