INGREDIENTS 

  • Fresh mozzarella, diced, as per your protein portion 
  • 10g pesto
  • 1 punnet of cherry tomatoes, halved
  • 30g avocado, diced
  • ½ red onion, diced
  • Romaine lettuce leaves, chopped 
  • ½ a cucumber, diced
  • Fresh basil leaves, torn
  • Salt and pepper to season

METHOD

Stir pesto through the fresh mozzarella, combine with the rest of the ingredients
