INGREDIENTS
- Fresh mozzarella, diced, as per your protein portion
- 10g pesto
- 1 punnet of cherry tomatoes, halved
- 30g avocado, diced
- ½ red onion, diced
- Romaine lettuce leaves, chopped
- ½ a cucumber, diced
- Fresh basil leaves, torn
- Salt and pepper to season
METHOD
Stir pesto through the fresh mozzarella, combine with the rest of the ingredients
